A quick, vegetarian, wholesome pita that comes together in less than 20 mins.
Are you like me- craving crunchy and fresh , but also spicy and flavorful all at the same time! Well this pita wrap hits it just right. A little twist to the regular falafel wrap- I added some of my staple Indian Spices to add that kick and some fresh dill and parsley salad for the crunch and freshness. Check out the recipe below.
I used canned garbanzo beans , that cuts the prep time into half. The pitas are from Trader Joes and all 100% whole wheat adding a ton of fiber to this already flavor bursting dish.
For the Salad-
Chopped Parsley leaves- 1/2 cup
Chopped dill leaves- 1/2 cup
Red Onions , sliced- 1/2
1 sliced Avocado
1 diced tomato- I used a yellow tomato:)
Salt, pepper
Red chilly powder- 1/4th tsp
Olive oil - 1 tbsp.
Lemon juice- 1 tbsp.
For the Curried Chickpea
Garbanzo beans- 1 can
Olive oil - 1 tsp
Red Chilly powder- 1/4th tsp
Cumin seeds - 1/2 tsp
Curry powder- 1/2 tsp
Pita bread
Feta Cheese
Olives
Mixed micro greens (optional)
Method:
Step 1: Let’s Get Started
Mix all the salad ingredients together and set aside.
In a skillet heat some olive oil, add the cumin seeds and all the spices for the beans.
Empty the can of Garbanzo beans (after draining all the liquid), into the pan and sauté. Mash along as you sauté it all.
Now for the assembly. Heat up the pita.
Lay it on a plate, spread the chickpea mixture, top with the salad, the sliced olives add some micro greens and sprinkle some feta.
Roll and dig in!
